Keeping a finely honed cutting edge on all your tools and knives is no longer the chore it once was.   The secret lies in the type of sharpening stones to use and the process of sharpening.

Japanese Water Stones manufactured by Matsunaga Stone Co., of Osaka, Japan, under the two brand names of Multiform Deluxe Water Slip Stone and Sun Tiger Deluxe Water Slip Stone, have emerged as the #1 choice all over the world.

A Water Stones’ strongpoint is their ability to abrade quickly to reveal new sharp cutting particles with each stroke. The small particles that do the cutting are loosely bond in the stone, and so during sharpening, the surface particles are quickly washed out, allowing new, sharp particles to start wrking on the blade. These Water Stones must be soaked in water for three minutes before using. When using, sprinkle drops of water on the stone every dozed strokes to keep the surface sufficiently lubricated. Water is the only lubricant you need.

The sharpening process is GSH, or, "Grind – Sharpen – Hone".  Here is explanation:

GRIND – You may not be able to see the chips on your cutting tools, but they are there. Also, for when the blade is unusually dull. We recommend the 1000 Grit Slip Stone to handle this Grind, or rough sharpening step.

SHARPEN – This is the normal sharpening stage and the one that will consume the most amount of time. We recommend the 4000 Grit Slip Stone to handle this stage of the sharpening process.

HONE – This is the stage that takes off the fine scratches and burrs left by coarser stones and to polish the surface. We recommend the 8000 Grit Slip Stone for this finishing step.

So, in principle, one needs at least three stones if one desires to achieve the pinnacle of sharpness for his cutting tools. We have selected the world’s preferred manufacturer, Matsunaga Stone Co., and their Multiform and Sun Tiger brands for this Ultimate Sharpening Stone Kit.
